At Stockton We use an apple X-serve to stream video files for the
faculty that want to stream video for their students.
The process generally follows these steps:
Faculty member gets video (and permission to use video)
Faculty member give me video
I Digitalize and edit the video (using Final Cut Pro)
I encode the video (using compressor - a part or the Final cut Pro App)
I put the mpeg4 file on the streaming server and send the Faculty member
a reference movie (a small video file that calls the streamed version of
the video) that they embed in a page with in WebCT.

We have been doing this for about 3 years now and have had very few
issues, and very good results.
